Chilli and Lime Dressing

Use this dressing to add zest to a salad.

Ingredients

1 fresh red chilli, thinly sliced
finely grated zest of 1 lime
juice of 2 limes
1 tablespoon fish sauce
1 tablespoon rice wine vinegar
½ teaspoon sesame oil

Instructions

  1. Place cilli, lime zest, and juice in a screw top jar and shake well.
  2. Add the fish sauce, vinegar and oil to the jar and shake until well combined and not separating.
  3. Refrigerate for an hour to let the flavours infuse, shaking regularly.
