Ham Soup with Stewed Greens

Ingredients

750g (27 oz) smoked ham hock
10 cups water
2 bunches of spinach
3 medium potatoes

Instructions

  1. Add ham hock to water and bring to the boil. Reduce the heat and simmer uncovered for 45 minutes, skimming the froth of the surface occasionally.
  2. Rinse spinach leaves thoroughly to remove. Add spinach to the soup, cover and simmer gently for ½ hours.
  3. Peel and halve the potatoes, add to the ham and spinach soup and cook for another 45 minutes or until just tender. Remove soup from heat. Remove the ham from the soup first.
  4. Remove spinach with a slotted spoon and place in a shallow serving dish.
  5. Skin the ham and cut the meat into small cubes. Place in a deep dish, add the potatoes and pour on the cooking liquid to serve.
