Bread Sauce

This sauce is traditionally served with roast turkey or chicken.

Ingredients

¼ white loaf, 2-3 days old
350 ml (12 fl oz) milk
½ onion, peeled
2 cloves
½ bay leaf
salt and black pepper to taste
15g (½ oz) butter
2 tablespoons single cream

Instructions

  1. Remove the crusts from the bread, cut into cubes and turn into breadcrumbs, either by hand or in a food processor. Put aside.
  2. Put the milk in a small pan with the half onion stuck with the cloves, and the half bay leaf. Bring slowly to the boil, then remove from heat and stand, covered for 20 minutes.
  3. Discard the onion and bay leaf and skim the milk. Reheat gently, until simmering, then shake in 5-6 tablespoons breadcrumbs gradually, stopping just before the desired thickness is reached, remembering that the sauce will thicken slightly on cooking.
  4. Simmer gently for 3 minutes, adding salt and pepper to taste . Remove from the heat, stir in the butter and cream and serve as soon as possible after making.
