Bread Sauce
This sauce is traditionally served with roast turkey or chicken.
Ingredients
¼ white loaf, 2-3 days old
350 ml (12 fl oz) milk
½ onion, peeled
2 cloves
½ bay leaf
salt and black pepper to taste
15g (½ oz) butter
2 tablespoons single cream
Instructions
- Remove the crusts from the bread, cut into cubes and turn into breadcrumbs, either by hand or in a food processor. Put aside.
- Put the milk in a small pan with the half onion stuck with the cloves, and the half bay leaf. Bring slowly to the boil, then remove from heat and stand, covered for 20 minutes.
- Discard the onion and bay leaf and skim the milk. Reheat gently, until simmering, then shake in 5-6 tablespoons breadcrumbs gradually, stopping just before the desired thickness is reached, remembering that the sauce will thicken slightly on cooking.
- Simmer gently for 3 minutes, adding salt and pepper to taste . Remove from the heat, stir in the butter and cream and serve as soon as possible after making.
