Cranberry Sauce
This excellent sauce is served cold. Its fresh taste makes it an ideal accompaniment to hot or cold roast turkey or ham. What is not used can be stored in the refrigerator. For a more mature taste replace the orange juice with a tablespoon of good quality port.
Ingredients
450g (1 lb) cranberries
450ml (¾ pint) water
225g (8 oz) sugar
1 tablespoon orange juice
Instructions
- Wash and pick out the cranberries that are unsuitable.
- Combine the water and the sugar in a saucepan and bring to the boil. Add the clean berries.
- Bring back to the boil, then turn the heat down until the sauce is simmering. Simmer for 3 minutes or until the berries start to burst. Turn of the heat and cover the pan.
- Let the sauce stand for a few minutes, pour into a heat proof bowl and add the orange juice mixing carefully so as not to burn yourself.
- Leave to cool, allowing the sauce to thicken. Serve cold.
