Brown Stew

Serve this with some crusty bread and onion pickle for a delicious traditional treat.

Ingredients

500g (18 oz) beef stewing steak
1 tablespoons butter
2 tablespoons flour
1 onion, diced
1½ cups water
1 teaspoon vegetable stock powder
1 teaspoon salt
3 shakes black pepper
1 teaspoon chopped parsley

Instructions

  1. Trim the fat off the meat and cut into 2½cm (1 inch) pieces.
  2. Heat the butter in a saucepan and brown meat quickly on all sides. Take the saucepan off the heat and remove the meat.
  3. Before returning the saucepan to the heat add the flour and the onion. Mix well. If too dry add another two tablespoons of butter.
  4. Return the saucepan to the heat and cook the onions mixture slowly until the mixture develops a brown colour. Stirring all the time.
  5. Add water and stock powder and bring to the boil, stirring continually. Add salt and pepper.
  6. Return the meat to saucepan and simmer gently, covered. Stir frequently.
  7. Remove fat and serve on a hot serving dish. Garnish with chopped parsley.
