Brown Stew
Serve this with some crusty bread and onion pickle for a delicious traditional treat.
Ingredients
500g (18 oz) beef stewing steak
1 tablespoons butter
2 tablespoons flour
1 onion, diced
1½ cups water
1 teaspoon vegetable stock powder
1 teaspoon salt
3 shakes black pepper
1 teaspoon chopped parsley
Instructions
- Trim the fat off the meat and cut into 2½cm (1 inch) pieces.
- Heat the butter in a saucepan and brown meat quickly on all sides. Take the saucepan off the heat and remove the meat.
- Before returning the saucepan to the heat add the flour and the onion. Mix well. If too dry add another two tablespoons of butter.
- Return the saucepan to the heat and cook the onions mixture slowly until the mixture develops a brown colour. Stirring all the time.
- Add water and stock powder and bring to the boil, stirring continually. Add salt and pepper.
- Return the meat to saucepan and simmer gently, covered. Stir frequently.
- Remove fat and serve on a hot serving dish. Garnish with chopped parsley.
