BLT Sandwiches
BLT stands for Bacon, Lettuce and Tomato and is a wonderfully simple combination that always satisfies the taste buds. Be careful not to over-salt the vegetables as the bacon usually provides enough salt for this sandwich.
Ingredients
12 slices of whole-wheat sandwich bread
6 rashers of bacon
2 cup of finely shredded lettuce
3 large tomatoes, sliced thickly
½ cup good quality mayonnaise
½ small onion, finely chopped
12 pimento filled olives
salt and black pepper to taste
Instructions
- Slightly toast the bread, so as to make it just firm to the touch.
- Fry the bacon rashers until they are crisp, place on paper towel to soak up the extra fat.
- Mix the mayonnaise and the onion, then spread six slices of the toasted bread with half of the mayonnaise mixture.
- Put a handful of lettuce onto the six slices of the toasted bread and spread evenly all over the bread. Season with salt and pepper if needed taking care not to over-salt depending on how salty your bacon is.
- Cut the bacon rashers into three and arrange on top of the lettuce. Place tomato slices on top of the bacon and season if needed.
- Spread the remaining breads with the other half of the mayonnaise and put on top of the lettuce, bacon and tomato stacks.
- Cut all sandwiches in half and place an olive secured with a toothpick on each half. Serve while still warm.
