Soft Bread Cakes

These bread cakes may be split and toasted, buttered and then filled with what ever you like.

Ingredients

340g (12 oz) whole wheat flour
1 teaspoon salt
30g (1 oz) fresh yeast
1 teaspoon brown sugar
1 cup of milk
30g (1 oz) vegetable fat
1 egg, beaten

Instructions

  1. Cream the yeast and sugar together until smooth.
  2. Warm the milk with the vegetable fat.
  3. Mix the milk and fat with the creamed yeast and stir in the beaten egg.
  4. Put the flour and salt in a mixing bowl. Make a well in the flour and work the milk mixture in gradually to make a soft dough.
  5. Knead lightly then form into six round cakes.
  6. Cover and leave to rise for 20 minutes in a warm place.
  7. Bake in a oven preheated to 220°C/425°F/gas mark 7, for about 15 minutes.
  8. Glaze with beaten egg or milk and sugar a few minutes before removing from the oven.
