Chocolate Chip Muffins
Ingredients
2 cups self raising flour
¼ cup brown sugar
Third of a cup cocoa powder, sifted
100g (3½ oz) butter or margarine, melted
2 eggs
½ cup sour cream
¼ cup milk
½ cup dark chocolate bits
¼ cup milk chocolate bits
Instructions
- Combine flour, sugar and cocoa powder in a bowl. Mix in the butter making sure you don't over mix.
- Then stir in the eggs, sour cream and milk. Do not overmix. Fold in both the dark and milk chocolate bits.
- Spoon mixture into muffin tins until each is two thirds full. Bake in a moderate oven (180°C) for 18 minutes. Cool on a wire rack. Can be stored in an airtight container.
