Chocolate Chip Muffins

Ingredients

2 cups self raising flour
¼ cup brown sugar
Third of a cup cocoa powder, sifted
100g (3½ oz) butter or margarine, melted
2 eggs
½ cup sour cream
¼ cup milk
½ cup dark chocolate bits
¼ cup milk chocolate bits

Instructions

  1. Combine flour, sugar and cocoa powder in a bowl. Mix in the butter making sure you don't over mix.
  2. Then stir in the eggs, sour cream and milk. Do not overmix. Fold in both the dark and milk chocolate bits.
  3. Spoon mixture into muffin tins until each is two thirds full. Bake in a moderate oven (180°C) for 18 minutes. Cool on a wire rack. Can be stored in an airtight container.
