Blueberry Muffins

When making muffins it is important not to overmix the batter.

Ingredients

2 cups plain flour
1 tablespoon baking powder
½ cup brown sugar
250g (9 oz) of fresh or frozen blueberries
1 cup milk
125g (4 oz)butter or margarine, melted
1 egg
1 teaspoon vanilla essence

Instructions

  1. Sift flour and baking powder together into a bowl. Stir in sugar and berries. Make a well into the centre of this mixture.
  2. Whisk together milk, butter, egg and vanilla. Pour into well. Lightly fold ingredients together making sure you don't over mix.
  3. Spoon mixture into greased muffin tins until two thirds full. Bake in hot oven 200°C (400°F/gas mark ) for 20 minutes or until golden brown.
  4. Cool in tins for a few minutes. Turn out of tins. Cool on a wire rack. Serve dusted with icing sugar, if desired. Can be store in an airtight container.
