Blueberry Muffins
When making muffins it is important not to overmix the batter.
Ingredients
2 cups plain flour
1 tablespoon baking powder
½ cup brown sugar
250g (9 oz) of fresh or frozen blueberries
1 cup milk
125g (4 oz)butter or margarine, melted
1 egg
1 teaspoon vanilla essence
Instructions
- Sift flour and baking powder together into a bowl. Stir in sugar and berries. Make a well into the centre of this mixture.
- Whisk together milk, butter, egg and vanilla. Pour into well. Lightly fold ingredients together making sure you don't over mix.
- Spoon mixture into greased muffin tins until two thirds full. Bake in hot oven 200°C (400°F/gas mark ) for 20 minutes or until golden brown.
- Cool in tins for a few minutes. Turn out of tins. Cool on a wire rack. Serve dusted with icing sugar, if desired. Can be store in an airtight container.
