Freshly Brewed Coffee

This is a base for any good coffee mixture. It gives you the same taste as if the coffee had been percolated and is quite delicious.

Ingredients

5 cups of water
10 generous teaspoons of freshly ground coffee of your choice
3 teaspoons of sugar

Instructions

  1. Put sugar and 1 cup of water to boil in a small saucepan. Place the remaining 4 cups of water to boil in a separate saucepan.
  2. When the sugar water mixture is boiling remove it from the heat and add the coffee one teaspoon at a time. Do not mix, allow the coffee to slowly float to the bottom of the saucepan. When most of it has sunk, return to moderate heat and watch the mixture allowing it to just start boiling before removing from heat. Repeat the boiling process again. Then leave aside for about 10 minutes to allow the flavours to infuse.
  3. Strain the coffee mixture through a fine sieve or a muslin cloth. Add the remaining hot water, slowly mixing. Allow to stand for 5 minutes and then serve as per your liking.
